The Sunday Night Dinner: Dry Aged Beef with a fine Argentinian Malbec

As you become a member of the corporate world it is inevitable that your tastes will change and your menu will evolve. No more Ramon Noodles made in the coffee maker, no more JJ day old bread with the jar of peanut butter that has lasted you two semesters. Going out and ordering a great meal is one thing, but you can really show off to your friends and girls (or boys) when you can make a restaurant quality food in your own home. This week my favorite Sunday night meal includes beef… Steak to be exact! Tonight it was Dry Aged Beef with a fine Argentinian Malbec.

Dry Aged BeefDry Aged beef is a wonderful treat where the butcher pretty much takes a large cut of beef and lets it sit 4-6 weeks. After its natural enzymes and evaporation takes its toll the butcher cuts away the discolored “spoiled” portion, leaving a concentrated tender steak. My suggestion, try it, it costs a lot more then regular steak (about $22 a pound at the Milwaukee Whole Foods.) but one pound will easily serve two people. Cook it on high heat in a cast iron skillet (or grill). DON’T cook it beyond medium. For more info on Dry Aged Beef try www.food.com and search for dry aged beef.

The next important addition to any meal is a fine wine. What do I mean by a fine wine? Not expensive, but something you enjoy (even if it is white wine with steak). My suggestion is to stick to the general rule of red with red meat and vice versa, but tastes are preferences. Tonight I went with a Malbec. Alamo Malbec to be exact. Alamo wine can be found in most fine stores. I believe I purchased mine at a Whole Foods.

The Malbec paired great with the savory steak and I highly suggest you try a similar meal on your next Sunday. Don’t be afraid to adventure beyond your capabilities.
